Make Restaurant-Style Kashmiri Dum Aloo at Home with This Easy Recipe
Kashmiri Dum Aloo Recipe: One Bite and You’ll Crave It Again and Again: Usually, in our Odia homes, we are familiar with the Aloo Dum recipe at home. But today, we will tell you how to prepare Kashmiri Dum Aloo. This recipe has been shared by Chef Sanjeev through a podcast. So let’s know its preparation method.
First Step: Boil 8 small potatoes for 2 to 3 whistles. Be careful that the potatoes do not burst. After peeling the skin from the potatoes, make holes in the potatoes with the help of a fork or toothpick, so that the spices can enter the potatoes. Heat 2 tablespoons of oil in a large pan and fry for a while.
Second Step: For the masala, fry 2 medium onions, 2 tomatoes, 8 to 10 red chillies, 10-12 cashews, 2 small cardamoms, 2 bay leaves, 5 to 6 cloves, cinnamon sticks, and 1 star anise in the oil left after frying the potatoes. After cooling it, grind it well in a mixer grinder.
Third Step: Now add two spoons of oil in a pan and add the fried masala. Remember to grind the fried masala after straining it in a large bowl. Chef Sanjeev says that you can add fennel powder to make it tasty. For this, when you grind the masala, add 1 small spoon of fennel powder, salt to taste, red chilli powder and coriander powder and mix it. Add 1 teaspoon garam masala or sabzi masala for flavour.
For a creamy gravy, do not add turmeric. Add a teaspoon of sugar to balance the taste. After it boils, add the fried potatoes and stir. Finally, add kasturi methi and coriander leaves and serve Kashmiri Dum Aloo on a plate.
